Friday Fitness: Fun with Focaccia
Hi Beautiful Brides-to-be,
Do you think carbs have developed a bad rap? If you shy away from eating carbs then I have a healthy recipe for you that will allow you to indulge guilt-free! I recently visited Matt Rosen, head chef of FOUR Restaurant. He shared his recipe for a delicious focaccia flatbread that won’t break the calorie bank. All the meals at FOUR are nutritionally balanced and are under 650 calories. Watch us bake up this quick dish in the kitchen!
Focaccia Flatbread
Ingredients
- 100 g Focaccia multigrain loaf
- 3 tbsp Arugula walnut pesto
- ¼ cup Cheese Roquefort
- 4 Grape tomatoes (halved)
- 1 tbsp Baby arugula
- ¼ tsp Basil sprouts (flat)
- 1 tbsp Extra virgin olive oil
- Slice focaccia (homemade or store bought) loaf in half lengthwise. Slice again into even portions.
- Brush with olive oil and grill on both sides until lightly toasted.
- Spread pesto evenly and then crumble cheese over top.
- Layer grape tomatoes.
- Place focaccia on a parchment paper lined baking tray and bake for 5 minutes at 350 degrees F.
- Finish with arugula and basil. Cut into 4 even pieces.
Method
Arugula Walnut Pesto
Yield: 2.5 cups
Ingredients
- 1½ cups + 2 tbsp Baby arugula
- ½ cup Baby spinach
- 2 tbsp Fresh basil
- ½ cup Walnut halves
- 2 pc Lemon
- 1 cup Extra virgin olive oil
- ½ cup + 2 tbsp Water
- ½ cup Grano Padano cheese (grated)
- 1½ tsp Margarita salt
- Blanch the greens in boiling salted water for 30-45 seconds, and refresh in an ice bath.
- Squeeze excess water from greens.
- Incorporate greens and all other ingredients in a food processor until completely smooth with a consistent colour.
- Place pesto in a sealed container and store in the fridge for up to 3 days or freeze up to 2 weeks.
