Friday Fitness: Beet the Boredom of Salad
Hey there Smart Brides,
Do you think salad is nothing more than boring lettuce and tomatoes? Well, let me expand your horizons my friends! Head chef Matt Rosen from FOUR Restaurant was kind enough to invite me into his kitchen to learn how to prepare a salad so fantastic that it can be a main dish!
I wasn't always a lover of beets, but this salad is guaranteed to make a believer out of even the toughest critics! Watch the video of us preparing it here and bon apetit!
Raw & Pickled Beet Salad
(with crumbled goat's cheese, pear, organic greens, and sunflower seeds)
Yield: One portion
Beet Salad
Ingredients
- 3 tbsp mixed organic greens
- 2 tbsp mustard vinaigrette
- 3 tbsp pickled beets, sliced (see recipe below)
- 1 tbsp + 2 tsp goat cheese
- 1 tbsp + ¾ tsp raw beets, sliced
- ¾ tsp sunflower seeds
- 1 pear, sliced
Method
- Lay sliced pickled beets, slightly overlapping, on the plate.
- Gently toss greens with mustard dressing.
- Place a mound of greens on top of the sliced beets.
- Sprinkle sunflower seeds and goat cheese on top.
- Place a small mound of raw sliced beet and sliced pear on top of the salad. Serve.
Pickled Beets
Ingredients
- 3 ½ tbsp salt
- ½ cup sugar
- 1 cup white vinegar
- 2.5 L water
- 2 kg or 4.5 lbs raw beets
Method
- Place all ingredients into an adequate sized pot.
- Bring to a boil and simmer until beets are knife tender, about 30-45 min.
- Allow beets to cool in liquid.
- Once beets are cool enough to handle, peel and store in liquid.
- Will keep for two weeks.
